3/4 pound Smoked Salmon, broken into bite-size pieces
1/2 large Organic Sweet Yellow Onion, quarter sliced and separated
1 Organic Bell Pepper (use Red Bell Pepper) diced
3 tablespoons Olive Oil
Lemon Juice to taste
Dill to taste
4 heads Bibb Lettuce, cut in half and hollowed out by removing small inside leaves
Baguette Bread Slices or Toast Points
Combine all ingredients except lettuce, then spoon into center of each lettuce half.
Serve with accompanying toast points or fresh baguette.
