Ingredients

2 cups Napa cabbage, sliced

1½ cups Dried Bing Cherries or fresh sweet cherries, pitted

1 large organic orange, peeled and sliced

½ cup jicama, peeled and cut into small wedges

¼ cup watercress, torn into bite-sized pieces

¼ cup walnuts, sliced

3 tablespoons vegetable oil
-
3 tablespoons rice vinegar or white wine vinegar

2 shallots, finely chopped
-
1 tablespoon sugar
-
1 teaspoon ginger root, grated

1 teaspoon soy sauce

Pepper to taste
Dressing
Directions
Combine salad ingredients together.
In a separate bowl, mix dressing ingredients together thoroughly.
Toss into salad mixture.
Serve chilled.
