1/4 cup Cider vinegar
1/2 teaspoon Salt
1 teaspoon Sugar
1 large Papaya (use Green Papaya) about 4 cups
1 Jalapeno, minced
1/4 cup Red Bell Pepper, minced
1 tablespoon Ginger Root, grated
Peel the papaya, remove the seeds, and cut into very fine strips.
Mix all the ingredients together.
Put into a clean jar and refrigerate overnight.
