6 tablespoons Unsalted Butter

1 head Roasted Garlic*

ยฝ cup Heavy Cream

1 ยฝ teaspoons Kosher Salt

1 ยฝ teaspoons Freshly Ground Pepper

4 Egg Yolks

1 cup Shredded Parmesan Cheese

1 Egg
-
1 teaspoon Whole Milk

Directions
Preheat the oven to 375ยบF.
In a large pot, add the potatoes and cover with water. Bring to a boil and cook for 15 minutes or until fork tender. Drain the potatoes and, using a ricer, press them into a bowl.
Add the butter and the next 6 ingredients to the bowl. Mix well to combine. Place the potato mixture into a piping bag fitted with a large star tip.
Line sheet pans with parchment paper and spray them with olive oil. Pipe the potatoes in a swirling motion to about 3-inches in diameter.
In a small bowl, whisk together the whole egg and milk. Carefully brush the mixture over the potatoes. Place in the preheated oven and bake for 20 minutes. Remove from the oven and season with the Tuscan grinder.
Recipe Note
*To roast garlic, trim the end of the garlic bulb opposite the stem end to expose the end of the cloves. Drizzle the cloves with olive oil, season with salt & pepper, wrap with foil and place into a 400ยบF oven. Bake for 45 minutes.
