Spicy Okra and Napa Cabbage Stir-Fry is a bold Indian-inspired side dish featuring tender okra and crisp Napa cabbage tossed with mustard seeds, garlic, and warming spices. Finished with a touch of heat, this quick stir-fry delivers vibrant flavor and texture that pairs perfectly with rice or flatbreads.
Ingredients

1 cup Indian okra, cut crosswise into 1/2-inch rounds

2 cups Napa cabbage, shredded

2 tablespoons oil (preferably mustard or vegetable oil)

1-4 Thai chili peppers, finely diced (adjust to heat preference)

1 medium onion, sliced

2 cloves garlic, minced

1 teaspoon mustard seeds

1/2 teaspoon turmeric powder

1 teaspoon cumin powder

1/2 teaspoon garam masala

Salt to taste

Fresh cilantro for garnish
Directions
Heat oil in a heavy-bottomed pan, or Dutch oven. When oil is shimmering, add mustard seeds, and let them splutter.
Add onions, and sauté until translucent (2-3 minutes).
Add garlic and Thai chili peppers, and cook for 1 minute, being mindful not to burn.
Add okra and a pinch of salt, and cook until slightly tender (5-7 minutes).
Add turmeric, cumin powder and salt. Stir well.
Add the shredded Napa cabbage and cook for another 3-4 minutes, until the cabbage is wilted but still has structure.
Add garam masala, and cook for 1 minute.
Garnish with fresh cilantro.
Serve hot with steamed basmati rice, naan or roti.
