These Sweet and Savory Roasted Spaghetti Squash Boats are cozy, simple, and full of flavor. The squash is roasted until tender with olive oil and hot honey, then tossed with buttery apples and raisins for the perfect mix of sweet, savory, and just a little heat. Easy to make and seriously comforting—this is one of those dishes you’ll be happy to dig into.
2 Melissa’s Spaghetti Squash Boats
4 tablespoons Extra Virgin Olive Oil
4 tablespoons Melissa’s Habanero Hot Honey
1/4 teaspoon Salt
1/4 teaspoon Freshly Ground Pepper
2 tablespoons Unsalted Butter
2 teaspoons Brown Sugar
1 Melissa’s Hunnyz® Apple – cored; diced small
1 Organic Granny Smith Apple – cored; diced small
1 (3oz package) Melissa’s Flame Seedless Raisins
Preheat the oven to 350ºF.
Place the squash on a baking dish, cut side up, drizzle with the olive oil and honey, then season with salt and pepper.
Place the squash in the preheated oven and bake for 40-45 minutes or until the squash is fork-tender. Set aside and let cool.
Using a fork, scrape the “spaghetti strands” out of the squash into a bowl, reserving the squash shell. Set aside.
In a sauté pan, melt the butter and brown sugar over medium heat. Add the apples and raisins. Sauté for 5 minutes and then add the spaghetti strands and sauté for 2 minutes longer, stirring to combine.
Place the mixture back into the squash shells and serve.
