Ingredients

2 Roma Tomatoes, chopped

1 Jalapeno Chile, minced

1 organic lime (juice freshly squeezed)

1 bunch cilantro, chopped

1/2 red onion, chopped

1 tablespoon mango chutney

1 tablespoon Dijon mustard

1 tablespoon lime juice

4 cups Boston Lettuce or Red Leaf Lettuce, torn

6 ounces shrimp (medium or large size) cooked, peeled and deveined

1/2 cup organic avocado, diced

1/2 cup Caribbean Red Papaya, diced

1/3 cup Organic Bell Pepper (red Bell Pepper) sliced in thin strips

2 tablespoons cilantro, chopped
Directions
Mix first five ingredients together and set aside.
Combine in a small bowl chutney, mustard and lime juice; mix well. Add to tomato mixture for 'dressing'.
In medium bowl, combine remaining ingredients. Add dressing and gently toss to coat.
