Ingredients

1 red onion, quartered

1 red bell pepper, sliced

2 zucchini, sliced

6-8 asparagus spears

1 bunch broccolini, split lengthwise

2 ears corn, cut into wheels

2 Tbsp. olive oil

2 Tbsp. balsamic vinegar

6 cloves garlic, minced
-
1 tsp. sea salt
-
1/2 tsp. black pepper
Directions
In a large bowl, toss all ingredients to coat evenly.
Preheat pellet grill to 350°F using hickory pellets.
Grill vegetables for 30-45 minutes until caramelized and tender.
Arrange on a platter with preferred dips, salsas, or hummus.
