Ingredients

1 tablespoon Extra Virgin Olive oil

1/2 Melissa’s Perfect Sweet onion - diced small

1/8 teaspoon Kosher Salt

1/8 teaspoon Freshly ground Pepper

2 cloves Melissa’s Peeled Garlic - minced

1 package Melissa’s Soyrizo
-
6 Melissa’s New Mexico Hatch Peppers - roasted; peeled; seeded; chopped

6 pouches Melissa’s Four Cheese Sauce

1 cup Mozzarella Cheese - finely grated
-
1 cup Oaxaca Cheese - finely grated
Directions
Preheat the oven broiler to high heat.
In a cast iron pan, heat the olive oil over high heat. Add the onion, salt and pepper and sweat them until translucent, about 2 minutes.
Stir in the garlic, soyrizo and Hatch peppers, and cook until heated through, about 7-8 minutes.
Stir in the Four Cheese sauce. Add the grated cheeses and stir until well combined.
Place the pan under the broiler and cook until the cheeses are melted and golden brown, about 3 minutes. Serve with tortilla chips.
Recipe Note
You can garnish the dish with diced tomato and chopped cilantro.
