Ingredients

1 tablespoon Extra Virgin Olive Oil

1/2 Melissa’s Perfect Sweet Onion - diced small

1/8 teaspoon Kosher Salt

1/8 teaspoon Freshly Ground Pepper

2 cloves Melissa’s Peeled Garlic - minced
-
2 Melissa’s Red Fresno Peppers - seeded; diced small
-
1 Yellow Long Sweet Pepper - seeded; diced
-
1 Orange Long Sweet Pepper - seeded; diced

1 Roma Tomato - diced small
-
6 pouches Melissa’s Four Cheese Sauce

1 cup Mozzarella Cheese - finely grated

1 cup Oaxaca Cheese - finely grated
Directions
Preheat the broiler on high.
Heat the olive oil in a cast iron pan over high heat.
Add the onion and season with the salt and pepper. Sauté, stirring often, until the onions are translucent, about 2 minutes.
Stir in the garlic, peppers and tomato. Stir in the cheese sauce and grated cheeses and cook until melted, 2 minutes.
Place the pan under the broiler and cook until golden brown, 3 minutes. Serve with chips, as a topping for hot dogs or burgers, with vegetable crudités, etc.
