1 block firm tofu, cut into 1-inch cubes
2 red sweet peppers, chunked
1 lb. baby purple potatoes, halved
2 Tbsp olive oil
2 Tbsp soy sauce
1 Tbsp lemon juice
2 cloves garlic, minced
1 tsp smoked paprika
Salt and pepper, to taste
Skewers
Soak wooden skewers if using. Boil potatoes until just tender; drain.
Whisk oil, soy sauce, lemon juice, garlic, paprika, salt and pepper. Marinate tofu 15 minutes.
Thread tofu, peppers and potatoes on skewers.
Grill over medium-high heat for 10 to 12 minutes, turning occasionally, until charred and cooked through.
Serve hot.
