Couscous is a North African "pasta" traditionally made from durum wheat. However, there are wheat alternative versions that will also work in this basic recipe.
Ingredients

1 package couscous, prepared according to package directions

1 tablespoon olive oil

2 Organic Green Onions, diced fine

1 large Organic Bell Pepper (use red Bell Pepper) diced fine

2 cloves Organic Garlic, minced
Directions
In a large skillet, sauté onions, pepper and garlic in olive oil.
Add prepared couscous and stir gently until heated through.
Fluff and serve.
Recipe Note
- Couscous is traditionally served with a thick stew or rich soup.
- Make it a One Bowl Meal by topping Vegetable Couscous with garbanzo beans or toasted almonds, sliced or diced protein, or a good ol' fried egg. Guild the lily with a drizzle of chermoula and a shake of Dukkah or sesame seed.
- Be creative and add some other veggies such as steamed cauliflower or broccoli, baby bok choy or chard.
