Savor Melissa’s classic Jewish-style Noodle Kugel—wide egg noodles, buttery vanilla bean, sour cream, cottage cheese, raisins, cinnamon sugar, and a crunchy cranberry Clean Snax® topping—baked to creamy, custardy perfection.
½ pound Wide Egg Noodles
½ stick Unsalted Butter
2 Melissa’s Vanilla Beans – pulp only
6 Eggs
2 cups Sour Cream
2 cups Cottage Cheese
1 teaspoon Ground Cinnamon
½ cup Granulated Sugar
1 3 oz. package Flame Seedless Raisins
1 container Melissa’s Cranberry Clean Snax® – crushed
Preheat the oven to 350ºF.
Boil the noodles until just al dente. Drain them and place them into a mixing bowl. Mix in the butter and vanilla bean pulp.
In another bowl, whisk the eggs and the rest of the ingredients, except for the Clean Snax®.
Pour into the noodles and mix well. Pour the noodles into a greased 9-by-13-inch baking dish.
Top with the crushed Clean Snax® and bake in the preheated oven about 35-40 minutes or until the custard is set.
