Melissa's Corporate Chefs
This is a great side dish with a nice grilled steak.
2 tablespoons olive oil
2 tablespoons margarine (or butter)
1 pound Russian Banana Fingerling Potatoes, cut 1/2 lengthwise
Salt and pepper to taste
1/2 cup onion, diced
2 teaspoons chile powder
1/2 teaspoon cumin - ground
1/2 Melissa's Organic Bell Pepper (red or green) julienned
Heat the olive oil and butter on high until melted. Add the potatoes, salt and pepper and cook for 4 minutes.
Lower the heat to medium and add the onion. Cook for 3 minutes while stirring often.
Stir in the rest of the ingredients and cook for 5 minutes more or until potatoes are fork tender.
