2 pounds Okinawa Sweet Potatoes, peeled and sliced 1/4 inch thick
3/4 cup heavy cream
1/2 cup chicken stock
1 organic yellow onion, sliced 1/4 inch thick
1/4 teaspoon nutmeg, ground
1 cup Gruyere cheese, shredded
Salt and pepper to taste
Layer potatoes and onions evenly in a 2-quart casserole.
Mix together cream, stock, nutmeg, salt and pepper. Pour over potatoes. Cover tightly.
Bake at 350ยฐF for 30 minutes covered.
Uncover and bake 25 more minutes. Sprinkle with cheese and bake 20 minutes longer, until brown. Let stand before serving.
