Okinawan sweet potatoes are revered in their native Japan, where they are a symbol of health and longevity. Beyond their brilliant appearance, these spuds are celebrated for their sweet taste and creamy texture, which shine in culinary preparations both savory and sweet. 

Okinawan sweet potatoes are also called Okinawan yams, Hawaiian sweet potatoes, and Beni-imo. They are not to be confused with ube, true purple yams, which have darker, bark-like skin and a nuttier flavor.

Okinawan sweet potatoes have a honeyed, slightly earthy flavor. They can be eaten with their skin on, or peeled, and they retain their beautiful hue when cooked, making them an ideal choice for preparations that showcase their coloring.
