The beautiful purple color of these sweet potatoes makes for great conversation and brightens up any menu!
10 Okinawa Sweet Potatoes, peeled and cubed
1/3 cup unsalted butter, melted
Whole milk as needed
Place the potatoes in a pot and cover with cold water.
Place on the stove over high heat and bring to a boil. Cook until fork tender.
Drain and mash the sweet potatoes and add the butter and milk. Mix until creamy.
