This is a colorful kabob. If you don't mind the order of the veggies, have the kids help while they tell you what colors or vegetables are being skewered.
Ingredients

8 wooden skewers, soaked in water
-
1 Melissaโs Organic Red Onion, peeled, cut into 8 pieces
-
8 1-inch cubes green zucchini Squash
-
8 pieces red Bell Pepper
-
8 pieces yellow Bell Pepper
-
8 pieces green Bell Pepper
-
8 (1 inch) cubes Yellow Crookneck Squash
-
Melissaโs Hatch Pepper Seasoning, to taste
Directions
Thread equal amounts of the vegetables onto the skewers. Spray them with the cooking spray, season them with the Hatch seasoning and place on a medium heat grill or grill pan.
Grill them for 3-5 minutes per side or until you get nice grill marks. Remove them from the heat and serve.
