1 package Soyrizo
2 Russet Potatoes
1 Onion, diced
1 Green Bell Pepper, chopped
3 Eggs or egg substitute
Salt and Pepper
Peel and cube potatoes and fry with Soyrizo. Add onion and bell pepper and cook until crisp-tender.
Beat eggs and add to Soyrizo and vegetable mixture.
Continue cooking until eggs are done. Serve hot with tortillas.
