Combine Peewee Dutch Yellow® Potatoes, carrot, and Soyrizo in a large sheet of foil.
Drizzle with olive oil, season with salt and pepper, and fold to seal.
Place foil packet over campfire coals or on a portable grill and cook for 15-20 minutes, until heated through and slightly crisped.
Serve with a side of mixed greens.
