3 pounds Organic Spinach, cleaned thoroughly and chopped
1 cup Heavy Cream
1 small Organic Yellow Onion, chopped
1 tablespoon Chopped Garlic
1/2 cup Parmesan Cheese
Salt and Fresh Ground Black Pepper
Sauté the garlic and onion in a small amount of olive oil until golden.
Add the spinach and mix thoroughly.
Add the cream, Parmesan cheese, and salt & pepper to taste.
Continue cooking on a low flame until mixture is thickened.
