2 cups rice, cooked
2 cups organic carrots, coarsely shredded
2 large organic yellow onions, finely chopped
2 medium organic tomatoes, peeled and chopped
Organic Leaf Lettuce for garnish
Organic parsley for garnish
1/4 cup lemon juice
1 small organic yellow onion, finely diced
1 ripe organic avocado
1/2 cup olive oil
Salt and fresh ground black pepper
Mix everything together and lay on a bed of lettuce.
Pour Avocado Dressing over salad, garnish with chopped fresh parsley, and serve.
Mash the avocado and add the remaining ingredients. Combine until well blended.
