Ingredients

2 cups mayonnaise

1 tablespoon chipotle purée

2 tablespoons lime juice

1/2 teaspoon curry powder

1/2 teaspoon paprika
-
1/2 teaspoon dry mustard powder

2 cups Organic Gala Apples, diced with skin on

1 cup Chayote Squash, diced small
-
1 cup red onion, grilled and diced small
-
1/2 cup organic cilantro
-
1/2 cup walnuts, chili spiced
Waldorf Dressing
Salad Mix
Directions
Dressing Preparation
Combine dressing ingredients and mix well.
Salad Mix Preparation
Fold Waldorf dressing into Salad mix.
Apple Chips Preparation
Soak apples in simple syrup.
Place on a non-stick pad.
Bake in oven at low temperature until crisp.
Warm Apple Vinaigrette Preparation
Cook all ingredients in butter, add to blender, emulsify with oil, and thin with water (should have a "sauce like" consistency).
Coriander Vinaigrette Preparation
Add coriander seed to vinegar, steep in pot over low heat until soft.
Add all ingredients to blender, emulsify with oil.
Strain through fine sieve to remove seeds.
Season with salt and pepper.
Garnish 2 stalks of celery, washed and shaved through a mandolin.
Plating
Separate 1 head of butter leaf lettuce.
Lightly coat one leaf with coriander vinaigrette.
Place on plate. Top with salad mix. Top with apple chip.
Layer salad mix on top of apple chip. Continue until you have 3 complete layers.
Top with shaved celery.
Drizzle plate with warm apple vinaigrette.
