Ingredients

2 cups organic tomatoes, 2 medium tomatoes, cut into 1 inch cubes

1/2 teaspoon sea salt

1 cup organic cucumbers, quartered lengthwise and thinly sliced

2 stalks organic celery, sliced 1/2 inch thick

1 small organic red onions, cut in half and thinly sliced

2 cups Ciabatta Italian bread, torn into 2 inch pieces

1/4 teaspoon fresh ground pepper

4 tablespoons olive oil and balsamic salad dressings

1/2 cup basil, leaves torn into strips

1 cup Italian parsley, flat leaves roughly chopped
Directions
Place tomatoes in large salad bowl and sprinkle with salt.
Let stand for 5 minutes.
Soak the bread in water for 5 minutes.
Drain, squeeze and break up into smaller pieces and place in salad bowl.
Add remaining ingredients and mix well.
