2 pounds Blackeyed Peas, cooked
2 cloves Organic Garlic, fresh crushed
1/2 cloves Olive Oil
2 tablespoons Organic Lemon or Vinegar
2 teaspoons Salt
1/4 teaspoon Fresh Ground Black Pepper
3 Organic Tomatoes, ripe
1 Onion, sliced in rings
Black Greek Olives
Place the peas in a salad bowl.
In a separate bowl, make a mixture of the garlic, and olive oil.
Let marinate for 1 hour, stirring well.
Add the lemon juice or vinegar, salt, and pepper, and mix thoroughly.
Pour over the peas and gently toss to blend.
Garnish the peas with tomato wedges, sliced onions and olives.
