Ingredients

4 ripe plantain bananas, peeled and cut in half lengthwise

1 tablespoon butter or margarine, melted with 1 teaspoon of olive oil

1/4 cup honey

1 1/2 tablespoons orange juice

1/2 teaspoon lemon juice (use lime juice)

1/2 cup pecans, chopped

1/2 cup heavy cream, whipped, or ice cream or yogurt
Directions
Preheat the oven to 375 degrees F.
Using a pastry brush, coat plantains with butter-oil mixture and place cut side down in an ovenproof 13 x 9 x 2 inches
In a small bowl, combine honey with orange and lime juices.
Mix together well to incorporate the thick honey with the juices.
Pour mixture over plantains. Sprinkle with pecans.
Bake for about 20 minutes, turning plantains over and coating with the juice mixture several times during baking.
Serve on warmed dessert plates, pouring baking juice over all.
Add a dollop of whipped cream or scoop of ice cream or yogurt on the side.
