Dad, Dad, Dad! Celebrate Dad by spoiling him on Father’s Day. Father’s Day is always the third Sunday in June; this year, it falls on June 18th. Most dads love to grill, and Melissa’s grilling essentials are a must-have.

Be sure to have plenty of vegetables for grilling, and don’t forget the fresh fruit. Grilling fruits and vegetables is one of the latest trends. Portobello mushrooms, Asian veggies, Pinkglow® pineapples, stone fruit and more are delicious when grilling and enjoyed as hors d’oeuvres or sides.

Serve fresh fruit skewers with burgers, chicken or even veggie dogs! Add the freshly grilled corn, a green salad, and you are all set. For the salad, start with your favorite mix of greens; don’t forget about radicchio, spinach, arugula, watercress and sprouts. Toss the greens with fresh cucumber slices, steamed artichoke hearts, tomato wedges and sprouts for a beautiful, light salad. Sprinkle with balsamic vinegar, salt and pepper. For a heavier salad, toss with quinoa, couscous or cold pasta like penne, linguine or angel hair. Want to try something different and delicious? Grill a whole eggplant; after the grill is off (charcoal barbecue), place a piece of tin foil on the grill, then a WHOLE eggplant. Do NOT puncture with any holes... this will keep the juices in. Keep the lid on the grill, then turn the eggplant about every 15 minutes until it is completely tender, about an hour total. Once it is done, carefully remove and slice; it will be like butter! Sprinkle on a little truffle salt or Melissa’s Hatch Pepper Powder, and you have a wonderful treat. YUM!
