Ginger is a member of the Zingiberaceae Family of plants, which also includes the spice Turmeric. Only one species of ginger, called "Zingiber Officinale" (official ginger), is actually used for culinary purposes.
1/2 cup Ginger Root, peeled and grated
2 tablespoons Organic Lemon juice, freshly squeezed
2 tablespoons Pure Vanilla Extract
1/2 cup Sorghum Syrup
Ginger Syrup
2 quarts Sparkling Water or Carbonated Water
Ice Cubes
Bring ginger and water to a rapid boil in a 2 quart saucepan over medium high heat. Boil 10 minutes.
Remove from heat, strain ginger through a fine sieve, and pour liquid into a 1 quart jar. Stir in lemon juice, vanilla, and sorghum syrup; let cool.
Store syrup in refrigerator for up to 2 weeks.
Add syrup to sparkling or carbonated water. Add ice and stir.
For 1 serving, add 1/4 cup of syrup to 8 ounces sparkling or carbonated water.
