1 medium watermelon
2 Tbsp granulated sugar (adjust to taste)
Juice of 1 lime
2 cups cold water
Ice cubes
Fresh mint, for garnish
Smoke halved watermelon at 225°F for 1 to 1.5 hours. Cool completely.
Cut into chunks, remove seeds. Blend with sugar, lime juice and cold water until smooth.
Strain through fine mesh sieve. Adjust sweetness or acidity to taste.
Chill and serve over ice. Garnish with mint.
