These bite-sized baby potatoes are stuffed with savory chorizo, cheddar cheese, and onion, then wrapped in smoky bacon and slow-smoked to perfection. Serve as a hearty appetizer, a game day snack, or a crowd-pleasing party bite that disappears fast.
12 to 15 baby Dutch Yellow® Potatoes
1/2 pound chorizo sausage
12 to 15 strips smoked bacon
1/2 cup shredded cheddar cheese (or your choice)
1 small onion, chopped
2 cloves garlic, minced
Salt and pepper, to taste
Toothpicks
Preheat smoker to 400°F.
Boil potatoes in salted water for about 10 minutes, or until just tender. Drain and cool.
In a skillet over medium heat, cook chorizo until browned. Add onion and garlic, cooking until translucent. Remove from heat and stir in cheese. Season with salt and pepper.
Slice each potato ¾ of the way through and stuff with chorizo mixture.
Wrap each with a strip of bacon and secure with a toothpick.
Place on a baking sheet and smoke for 20 to 25 minutes, or until bacon is crispy.
Let cool slightly and serve warm.
