Ingredients

2 lbs. cooked shrimp
-
½ red onion, diced
-
1 bunch cilantro, chopped

2 tomatoes, diced
-
2 roasted Hatch peppers, diced

Juice of 1 lime
-
1 Tbsp kosher salt
-
½ Tbsp black pepper
-
¼ cup ketchup
-
2 cups Clamato
-
1 cucumber, diced
-
1 avocado, diced
-
1 Tbsp Melissa’s Hatch Pepper Hot Sauce (or more to taste)
Directions
In a large mixing bowl, combine all ingredients.
Toss gently to mix and adjust seasoning to taste.
Cover and refrigerate for about 1 hour before serving.
