This is a great "Good Luck" dish for the New Year. Try it with some chips for an appetizer!

Ingredients

1/2 each Melissa's Perfect Sweet Onion, diced

1 each Red Bell Pepper, diced

1 each Green Bell Pepper, diced

1 each Fresh Serrano Pepper, minced

1 each Fresh Jalapeño Pepper, minced

1 each Fresh Roma Tomato, diced

2 (11 ounces) packages Melissa's Steamed Ready To Eat Black-eyed Peas, rinsed or 2 (11 ounces) tubs Melissa's Black-eyed Peas, cooked; cooled; rinsed

1/4 cup Seasoned Rice Vinegar to taste

Sea Salt and Freshly Ground Pepper
Directions
In a bowl, gently combine all of the ingredients.
Refrigerate for 1 hour to incorporate flavors.
