1 pound Lotus Root, fresh
4 organic green onions
1 pound baby back pork, ribs separated
1 teaspoon salt
6 cups water
1 tablespoon fish sauce (about 1 to 2 tbsp.)
Thinly peel the lotus root and cut into 1/2 inch slices.
Slice spring onions, using entire onion, green and white parts.
Combine first three ingredients in a saucepan with the salt and water.
Bring to a boil. Cover and simmer for 1-1/2 hours or until well cooked and the liquid is reduced to 4 cups.
Add the fish sauce to taste. May be served with white rice.
