A sweet rice as a side for tofu curries or ham. This South African dish is usually served with game or sweetbread, but would also be good with tofu curry or ham.
Ingredients
-
1 cup sugar
-
1 teaspoon turmeric, ground
-
1 tablespoon salt
-
1 tablespoon butter
-
1 teaspoon ground cinnamon
-
1 cup seedless raisins or dried currants
-
1 teaspoon organic lemon rind
-
2 cups white rice
Directions
Bring 6 cups of water to a boil in a 3-quart saucepan. Add the sugar, turmeric, salt, butter, cinnamon, raisins, and lemon rind, and bring to a rapid boil.
Add the 2 cups of rice, cover, reduce the heat to low, and cook for 15-20 minutes until the rice is tender and all the water is absorbed.
