Black-eyed peas, a popular Southern bean, is traditionally eaten for the New Year in hopes of bringing good luck and wealth. Try this 'caviar' where everything is bigger in Texas.

Ingredients

1 package Melissa’s Steamed Black-eyed Peas
-
1 Organic Bell Pepper (Red) – diced

½ organic red onion – diced
-
1 organic scallion – trimmed, cut into rounds

1 lime – juiced
-
3 tablespoons seasoned rice vinegar

to taste kosher salt and freshly ground pepper

1 Jalapeño Pepper, seeded and minced
Option
Directions
Place all of the ingredients in a bowl, toss and serve.
Option
If you would like a little heat, add some fresh jalapeño pepper or some crushed red pepper.
Recipe Note
This is great with chips, or add one cup cooked rice and double the seasoning for a complete meal or late lunch snack.
