2 pounds Melissa’s Baby Dutch Yellow® Potatoes, halved
¼ cup sour cream
2 ripe avocados, peeled and seeded
6 tablespoons unsalted butter
Kosher salt and freshly ground pepper, to taste
Place the potatoes in a pot and cover with cold water. Bring to a boil and then simmer until fork tender, about 12-15 minutes.
Drain and add back to the pot.
Add the rest of the ingredients and whip with a hand mixer until creamy.
Re-heat over medium heat, stirring constantly, until warm. Serve immediately.
