1 1/2 tablespoons peanut oil
1 pound Chinese Long Bean, trimmed and sliced diagonally into bite-sized pieces
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 teaspoon sugar
3 tablespoons water
Heat a wok or large frying-pan over high heat until it is hot, and add the oil. When the oil is slightly smoking, add the beans and stir-fry for 30 seconds.
Add the salt, pepper, sugar, and water and continue to stir-fry for 1 minute.
Cover the wok and cook the beans for 5 minutes, or until soft.
Uncover, and continue to stir-fry until all the liquid is evaporated. Serve at once.
