Ingredients

1 – 1 ½ lb. bag Red, White and Blue Potato Medley, or sub with (Peewee Potato Medley)

1 ea. julienned Melissa’s Perfect Sweet Onion
-
1 ea. ear of corn, cut into equal size rings (approx. 1 inch)

3 ea. Veggie Sweet Peppers, cut in rings
-
3 cloves chopped garlic
-
4 tablespoons olive oil
-
Melissa’s Italian Spice Grinder to taste

6 – 10 x 10 squares of aluminum foil
Directions
In a mixing bowl, add the potatoes, onions, corn, veggie sweet peppers, and garlic.
Pour 2 Tbsp of the olive oil and season with Melissa’s Spice Grinder. Toss the potato mixture until well coated.
Divide the mixture in 6 portions on the individual foil squares.
Drizzle each packet with additional olive oil and Melissa’s Italian Spice Grinder.
Bring two sides of the foil to the top and seal together all the way across.
Seal the sides closed and fold up to create a small pouch.
Place on the grill with indirect heat for approx. 20-25 mins. Until potatoes are tender.
Remove from grill and place folded side down on the plate.
Cut an X in the foil and fold each corner open to expose the potato mixture. Enjoy!
