3/4 pound Gai Lan (Chinese Broccoli) or regular broccoli
8 cups water
2 tablespoons vegetable oil
1 teaspoon salt

Sesame oil
Combine oyster sauce and sesame oil in a small bowl and set aside.
Wash broccoli and peel tough skin on stems.
Remove florets from stems and cut into bite-size pieces.
Cut stems diagonally into thin slices.
Bring water, vegetable oil, and salt to a boil in a large pot.
Plunge broccoli into boiling water and cook for 4 minutes or until crisp-tender. Drain well and place on a platter.
Drizzle with oyster sauce mixture.
If you cannot get Gai Lan (Chinese Broccoli), try this simple but delicious preparation with Western style broccoli or fresh asparagus. Adjust the blanching time according to the size of the vegetables; they should be cooked through but still firm and crisp.
