Festive Yellow Rice is served on special occasions in Indonesia. It is sweet and aromatic and is a perfect accompaniment to satays (cubes of grilled meat, chicken or tofu with spicy peanut sauce).
Ingredients

1 stalk lemon grass

2½ cups long grain rice

1½ cups coconut milk

3 cup water

2½ teaspoons turmeric

1 teaspoon salt
-
½ teaspoon galanga

1 bay leaf
Directions
Cut lemon grass into pieces and tie in a bundle.
In a 3 quart pan combine all the ingredients. Bring to a boil over medium-high heat.
Reduce heat to medium-low and simmer, uncovered, stirring gently until the liquid is absorbed. Cover pan and reduce heat to low and steam about 20 minutes until rice is tender.
After 10 minutes gently fluff rice with a fork. Remove the bay leaf and lemon grass and serve.
