Ingredients

1 package Won Ton Wrappers

1/2 cup Shrimp Paste (see recipe below)

1 cup Shrimp (fresh and raw), diced

1/2 cup Green Garlic

Chives, chopped

1/4 Scallions, chopped

1 tablespoon Light Sesame Oil

1 tablespoon Shallot Oil (Salad Oil infused with Shallots)

Salt to taste

White Pepper to taste

1/2 pound Shrimp (scant), ground finely

1/4 cup Solid Vegetable Shortening (Crisco)

1 teaspoon Light Sesame Oil

1/4 teaspoon Ginger Juice

1 Egg White

1 pinch Salt and Pepper

Fresh Shrimp Paste
Directions
Beat all ingredients together very thoroughly in mixing bowl. Mix together filling ingredients evenly.
Place 1 tablespoon filling in center of Won Ton Wrappers that have been rounded off using the bottom of a glass or other round object.
Pinch together to form a small sack with 3 corners at the top.
Place in steamer for 3 minutes, remove. Serve with soy sauce, chili oil and hot mustard.
