Ingredients

1 package Won Ton Wrappers

1/2 cup shrimp paste (see recipe below)

1 cup shrimp (fresh and raw), diced

1/2 cup green garlic

Chives, chopped

1/4 scallions, chopped

1 tablespoon light sesame oil

1 tablespoon shallot oil (salad oil infused with shallots)

Salt to taste

White pepper to taste

1/2 pound shrimp (scant), ground finely

1/4 cup solid vegetable shortening (Crisco)

1 teaspoon light sesame oil

1/4 teaspoon ginger juice

1 egg white
-
1 pinch salt and pepper

Fresh Shrimp Paste
Directions
Beat all ingredients together very thoroughly in mixing bowl. Mix together filling ingredients evenly.
Place 1 tablespoon filling in center of Won Ton Wrappers that have been rounded off using the bottom of a glass or other round object.
Pinch together to form a small sack with 3 corners at the top.
Place in steamer for 3 minutes, remove. Serve with soy sauce, chili oil and hot mustard.
