1 pound Organic Carrots, diagonal sliced ½ inch thick
2 tablespoons Water
1 tablespoon Extra Virgin Olive Oil
1½ tablespoons Organic Lemon, juice freshly squeezed
½ teaspoon Cumin
¼ teaspoon Kosher Salt
¼ teaspoon Coriander
¼ teaspoon Cayenne
In a 2-quart microwave-safe casserole, combine the carrot slices and the water.
Cover and microwave on 100% power (high) for 8-9 minutes until tender, stirring once.
Put carrots in ice water to stop the cooking process.
Mash the carrots with the backside of a fork till the carrot pieces are the size of large peas. (Avoid over-mashing the carrots --they should have a rather lumpy texture.)
Combine olive oil, lemon juice, cumin, kosher salt, coriander and cayenne pepper.
Pour the mixture over the carrots, and toss to coat the carrots. Refrigerate for several hours and serve.
