4 medium Organic Carrots
1 tablespoon Lime Juice
1/8 teaspoon Organic Limes finely grated zest
2 tablespoons Cilantro, leaves finely chopped
1 teaspoon Vegetable Oil
Salt and Pepper
Cilantro, sprigs
Finely shred carrots in a bowl.
Toss together with remaining ingredients adding salt and pepper to taste.
Serve salad garnished with cilantro.
