Ingredients

4 Microwave Sweet Potatoes

1 cup crumbled bleu cheese, divided

4 tablespoons unsalted butter, divided

Kosher salt and pepper to taste
Directions
Cook 2 potatoes in the microwave for 8 minutes.
Set aside and repeat for the other 2 potatoes.
Carefully remove from the packaging.
Place each potato on a sheet of foil and slice each potato in half lengthwise.
Top each potato with the bleu cheese and 1 tablespoon of butter.
Season with salt and pepper.
Roll up tightly in the foil and place on a hot grill.
Cook until potatoes are tender, about 15 minutes.
Recipe Note
I like to garnish mine with some Cayenne Pepper.
