6 organic zucchinis, halved, others quartered
6 baby sunbursts
6 baby patty pans, blanched
2 Roma tomatoes, blanched, peeled and diced
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon canola oil
1 teaspoon peeled garlic, minced
In a hot sauté pan, add oil and garlic, sauté for 30 seconds.
Add vegetables and cook for 3 more minutes, season and serve.
