1/4 cup White Wine
1/3 cup Seasoned Rice Vinegar
2 tablespoons Dijon Mustard
1/4 Melissa’s Perfect Sweet Onion, minced
2/3 cup Extra Virgin Olive Oil
Kosher Salt, to taste
1 lb. Fresh Arugula, washed and dried
2 cups Melissa’s Red Muscatos™ Grapes, halved
4 tablespoons Pepitas
1/3 cup Crumbled Feta Cheese
¾ cup Shaved Parmesan
In a bowl, add the wine and the next 5 ingredients and whisk well to combine.
In a large bowl, add the arugula, grapes, Pepitas and feta cheese.
Add the contents from the other bowl and mix well.
Plate the salad on 6 or 8 chilled plates, garnish with the Parmesan and serve.
