Ingredients

3 medium beets, peeled

1 tablespoon seasoned rice vinegar

1 tablespoon fresh lemon juice

2 teaspoons Dijon-style mustard

1 teaspoon honey
-
3 tablespoons extra-virgin olive oil

Salt and freshly ground black pepper, to taste

1 tablespoon minced fresh basil leaves
Directions
Cut the peeled beets so they will fit in the food processor’s feed tube.
Using the processor’s shredding disk, grate the beets.
In a medium bowl, whisk together the rice vinegar, lemon juice, mustard, honey, olive oil, salt, and pepper.
Add the grated beets and minced basil to the bowl.
Toss well and serve.
