4 cups Napa cabbage, shredded
1 large carrot, shredded
1/4 cup green onions, thinly sliced
1/4 cup parsley, chopped
3 tbsp Dijon mustard
2 tbsp apple cider vinegar
1 tbsp honey
1/3 cup olive oil
Salt and pepper to taste
In a small bowl, whisk together mustard, vinegar, honey, and olive oil. Season with salt and pepper.
In a large bowl, combine Napa cabbage, carrot, green onions, and parsley.
Pour dressing over the slaw and toss to coat. Let sit for 10–15 minutes before serving to allow flavors to meld.
