Ingredients

4 tablespoons sesame oil

12 1/3 ounces tofu (firm) drained and cut into 1/2 inch cubes

2 tablespoons organic ginger root, grated

1 clove organic garlic, minced

1/2 cup organic leeks, sliced

⅓ cup Teriyaki Sauce

1/2 cup Organic Bell Pepper (use Red Bell Pepper) sliced

1/2 cup Organic Bell Pepper (use Green Bell Pepper) sliced

1 cup mushrooms, sliced
Directions
Heat 2 tbsp. sesame oil, add tofu and sauté until browned.
Add ginger, garlic and leeks, sauté briefly, remove from pan and toss with teriyaki sauce, set aside.
In the same pan, heat remaining 2 tbsp. sesame oil and sauté broccoli and peppers for 3 minutes, add sno peas and mushrooms, and sauced tofu. Stir-fry until heated through
Remove from heat, and add orange segments. Serve hot.
