Ingredients

¼ pound Carrots – cut into match sticks

¼ pound Melissa’s Mini Cucumbers – cut into 1/8-inch thick rounds

¼ pound Red Bell Pepper – cut into match sticks

¼ pound Melissa’s Daikon – cut into match sticks

3 cloves Melissa’s Peeled Garlic – smashed
-
2 tablespoons Peppercorns

2 Fresh Serrano Peppers – halved

2 cups White Vinegar
-
2 cups Cider Vinegar
-
4 teaspoons Granulated Sugar
-
6 teaspoons Kosher Salt

2 large Eggplants – sliced 1/8-inch thick lengthwise

Extra Virgin Olive Oil

1/8 teaspoon Kosher Salt

1/8 teaspoon Freshly Ground Pepper

1 cup Real Mayonnaise
-
1 Fresh Serrano Pepper - minced

1 lb Napa Cabbage Leaves

½ pound Grilled Pork Tenderloin – thinly sliced

¼ cup Maggi
-
4 Green Onions – ends trimmed; cut into rounds

Directions
For the pickled veggies, place the carrots and the next 6 ingredients into a airtight container.
Place the vinegars, sugar and salt into a saucepan. Bring to a boil, stirring often to dissolve the sugar and salt. Once boiling remove from the heat and pour over the veggies. Let them cool, seal tightly and refrigerate overnight.
Prepare a hot grill.
Brush the eggplant slices with the olive oil and season with the salt and pepper. Place them on the grill and cook until you get nice grill marks, about 2 minutes per side. Remove them from the grill and let cool partially. You want them a little warm so that they roll easily.
To assemble, place a piece of eggplant onto a flat surface. Mix the mayonnaise with the Serrano pepper and spread some over the eggplant. Top that with a Napa cabbage leaf. Next, add some of the pork and spread some Maggi on that. Finish with some green onion and pickled veggies. Roll it up and secure with a toothpick. Repeat for the remaining ingredients.
